Pizza, pizza, pizza. Is there anyone out there who doesn’t love it? Well, I certainly do not belong to those. Indeed, I am a real pizza junkie. In the last few weeks my consumption of pizza reached an astronomical scale. Therefore, I was looking for something healthier but still related to pizza. And I found a breakfast pizza.

Pizza for breakfast? Well, yes! But I am not talking about this cold leftover pizza which you might devour after a long night of partying. No! I am talking abpout a healthy version made of oatmeal, apple puree and plain yogurt with fresh berries in it. So, basically this is your morning smoothie bowl disguised as a pizza.

I’ve got the original recipe from the German website EatSmarter and I added some honey and other berries to fulfill the needs of my sweet tooth:

Instructions
  1. Grind the oatmeal in a food processor until you have fine oatmeal flour. Mix it with the apple puree. Let the flaxseeds well in the water and add them to the oatmeal mixture. If you like it a bit sweeter, you can add a dash of honey to the mixture.
  2. Line a baking tray with baking paper and spread the dough in a circle (The dough should be good for two small pizzas or one big one). Preheat the oven to 347F (175°C) and bake the pizzas for 20 minutes.
  3. Blend the blueberries and mix them with the plain yogurt. Again you can add a dash of honey to sweeten the mixture
  4. Let the pizza crust cool down and then spread the blueberry yogurt onto it. Use walnuts, fresh blueberries and Honey to decorate your breakfast pizza.
