When I am standing in line for my favourite coffee store, I tend to observe other customers. And they couldn’t be more different. There are those who are completely overwhelmed with the extensive range of hot caffeinated beverages and therefore dither. Then there are those who aren’t satisfied with the range of beverages and who have special requests. And there are the repeaters who always order the same type of coffee. That’s possibly me. But that’s not all. I would call myself a wannabe coffee junkie. My coffee has to be sweetened with almost a ton of sugar, and ideally, it should consist of more milk than coffee. Can it still be called a proper coffee? No idea! I just know that the effect of its caffeine isn’t strong enough to make a marathon of learning feasible. Hence I was looking for an alternative and created this coffee-flavoured layer cake.

Just take a look at it. It’s a tempting rustic cake without much frills. And in case the coffee won’t result in the anticipated stimulating effect, it still has a lot of happiness inducing calories.  So instead of being hyperactive, you will endure a day of learning with a smile.

Instructions
  1. Beat the eggs together with the sugar for about 15 minutes. Then add vegetable oil and milk while constantly stirring. Sift the flour, baking powder and espresso powder and mix it with the eggs until everything is well combined.
  2. Preheat the convection oven to 302F (150°C). Grease two 6 inch springforms and distribute the cake batter evenly. Bake the cakes for 60 minutes
  3. If thhe cakes are well baked and cooled down, cut them horizontally to get two layers of the same size. If they didn't bake evenly, you might have to trim the cake a bit more. You should have three even layers (You can use the rest of the cake for cakepops)
  4. Mix two-thirds of the espresso powder with hot water and four tablespoons of powdered sugar. Soften the gelatine sheets in water and combine them with the hot coffee. Stir until the gelatine is completely dissolved.
  5. Whip 600 grams of whipping cream together with cream stiffener. Take two to three tablespoons of it and mix it with the gelling coffee to assimilate the temperature. Then mix it with the rest of the whipped cream. It should turn into a brownish colour. If you like a bit more coffee flavour, feel free to add the rest (or even more) espresso powder to the coffee-flavoured cream.
  6. You can start layering the cake. Place the first cake layer into an adjustable cake ring with the bottom down and spread some coffee-flavoured cream onto it. Repeat this process with the other two layers (Use the rim of the cake ring to create an even final layer of coffee-flavoured cream).
  7. Refridgerate the cake for a few minutes, remove the cake ring and coat the sides of the cake with the rest of the coffee-flavoured cream and put it into the fridge for the time being.
  8. For the decoration, whip the rest of the whipping cream with another package of cream stiffener. If you want some more coffee-flavour, just add a feww spoons of instant espresso powder. Fill the whipped cream into a piping bag with a star-shaped tip and apply the whipped cream to the top of your cake. Finally decorate the whippied cream puffs with coffee-flavoured chocolate.
