To all those busy squirrels out there: “You love hazelnuts? It might be healthier for you to look away now!” Just kidding guys. It’s well known that squirrels can’t afford internet access. But if it would be possible and if those busy rodents with their shrubby tail could catch a glimpse of my granny’s nut cake, some of them would probably go green with envy.
Nut cake? There are a lot of really good recipes out there. So, why should my granny’s nut cake be something special?
Personally, I associate a lot of childhood memories with this piece of cake. Okay, I was already in my teens when this cake was first introduced:
I was a teenager when my granny presented this cake crammed full of hazelnuts. She was so proud that she had typewritten it, printed out a good number of it, and gave it to every guest who expressed interest in it.
Besides my memories, this cake is simple and quick (if you ignore the baking time) in its preparation. Convince yourself and take a look:

- 200 g dark chocolate
- hazelnuts (coarsely chopped)
Ingredients
for the glaze:

- Separate the eggs and mix the egg yolk together with the sugar, margarine and hazelnuts.
- Beat the egg white together with a pinch of salt until stiff. Carefully fold it into the hazelnut mixture. After that add the booze (if you prefer the non alcoholic version, add orange juice).
- Pour the dough into a loaf pan lined with parchment paper and bake it for about an hour. The oven should be set to 347F (175°C).
- If the cakei s ready and cooled down a bit, melt the chocolate in a pot over boiling water. Pour it over the whole cake and decorate it with coarsely chopped hazelnuts
That’s it. I am not sure about you. But I will treat myself with a piece of it.
