…or bye bye summer time! Hi there, autumn!

I don’t want to believe it. The summer is good as gone and autumn is already knocking on our doors. Fully clad in rain, wind and freezing temperatures. That isn’t the perfect way to say hello to us, dear autumn! You’ve got so much more (and even better things) to offer. What about stopping this stormy weather and giving us a basket full of your finest fruits and vegetables? One basket at each front door, please. Then we can bake and cook until our wooden spoon is on fire. Pumpkin soup, plum cake, apple strudel… I could go on for years. So, Are you ready for some autumn baking? Good, I’ve got a super moist treat for you – my granny’s plum squares with cinnamon crumbles.

Plums? Does it ring a bell? Surprise, surprise! Last year around the same time, I introduced another of granny’s plum classics. In the last one, the plums almost drowned in a mixture of yogurt and eggs. Just because silly me has a really ridiculous phobia of baked fruits. Today’s plum cake (or squares) are different, though. True to the motto: “Get out of your comfort zome!” The double layer of yogurt and eggs gave way to crunchy cinnamon crumbles. And instead of an ever so problematic yeast dough, there is now an easy sponge mixture which is especially fluffy due to a dash of buttermilk ( or as in my particular case, a dash of vinegar infused milk).

So, what are you waiting for? Get at least a two kilo basket full of plums. This way you can nibble 500 grams on your own and put the rest into granny’s plum squares with cinnamon crumbles:

Instructions
  1. Beat the soft butter and sugar until frothy. And add the eggs.
  2. Sift the flour together with the baking powder. Add small servings of flour and buttermilk by turns.
  3. Spread the dough onto a standard baking tray lined with parchment paper. Preheat the oven to 356 (180°C)
  4. Remove the pips from the plums, quarter them lengthwise and press them into the dough. Put the cake into the oven for about 25 minutes.
  5. For the crumbles, mix all remaining ingredients together. Either use dough hooks or your hands to mix.
  6. When the cake is finished crumble the dough with your hands and spread the crumbles over the cake. Put it into the oven for another 20 minutes.
