First things first: I am so sorry for letting you wait for so long. I didn‘t know that work and university are that time consuming and nerve-wrecking. Nonetheless, I have to tell you about my plan: I want to change my diet completely due to my not so good health condition. But, if you are interested in, a detailed entry on my condition etcetera will follow soon.

Unfortunately, this dietary change involves the sacrifice of refined sugar and diary produce which is the exact opposite of those things you can usually find on my blog. But as a self-proclaimed sweet tooth I am currently trying to find sweet alternatives which weren‘t always working well. Either they did not taste that good or they just weren‘t photogenic enough. Maybe it‘s time to give a big thank you to my family, friends and even neighbours who more or less voluntarily sacrificed their taste buds to try my creations. However, it was worth the effort, I can finally present this chocolatey banana bread to you.

So, what is making this banana bread healthier than the other banana breads out their? Hmmm…maybe it is the whole spelt flour which provides the full package of nutrients. It‘s full of dietary fibre which make sure that just two tiny pieces of this banana bread will make you more than sated.

Or those black-speckled bananas. Yes, I am talking about the ones most of us, me included, avoid by all costs. They add a natural sweetness to this banana bread so that you don‘t have to use refined sugar.

What about the walnuts? They are full of those good omega-3-fatty-acids that are good for your heart. Or it is the plant-based milk that makes this sweet treat more attractive for vegans and people with lactose intolerance. Hmmm…or maybe it is all of the above?

Anyways, I think I have taken up enough of your time. Here is my recipe for a healthy chocolatey banana bread with walnuts:

  1. preheat the oven to 356 F (180°C) and line a loaf pan with parchment paper or grease it.
  2. Mix flour with cream of tartar and baking soda.
  3. In a shaker mix almond milk, cocoa powder, liquid coconut oil and cider vinegar.
  4. Peel the bananas and mash them (with a fork) in another bowl. Add the chocolatey almond milk and mix it until it becomes a rather thickish paste. You can now add a tablespoon or even more of the agave syrup.
  5. Mix this paste with the flour mixture. A hand mixer works best.
  6. Roughly chop the walnuts and roast them in a sauce pan without adding extra oil. Stir it now and then. When they are roasted, carefully fold them into the dough.
  7. Fill the dough into the loaf pan. You can decorate the top of the dough with walnuts, bananas or chocolate. Just gently press the decoration of your choice into the dough. Bake it for 30 to 40 minutes.
