I am dreaming of a White Christmas!

Yay! Finally! There is snow everywhere. At least in my little garden. IIt turned into a winter wonderland. For me, snow and Christmas belong together. Just like that song says: “I am dreaming of a White Christmas”. It’s about time, don’t you agree?  But it’s still a long time before Christmas and therefore I want to entrust these mini snow flurry cupcakes to you which, in a way, resemble the sudden start of winter.

I have to admit baking these teeny-weeny cupcakes is similar to a mass production. One after another comes out of the oven and until I have almost forty of them cramming my kitchen counter.  Forty mini cupcakes with a vanilla touch to it are waiting longingly to get their final accessory – a nice creamy topping. And I’ve really found the perfect addition, here on  this blog called Kaffee und Cupcakes. It’s a snow-white and fluffy marshmallow topping. The right thing for my mini snow flurry cupcakes. hmmm! Come closer and ave a smell! Can you smell the lime?

Instructions
  1. Preheat the oven to 325F (170°C) Line a mini cupcake tray with mini cupcake wrappers. If you don't have a mini cupcake tray at hand, use a standard baking tray. (Baking them on a normal tray leads to slightly misshapen cupcakes, though)
  2. Put flour, sugar, baking powder, salt and butter in a bowl and use dough hooks or a paddle attachment to mix everything together. Keep mixing until you get a sandlike consistency.
  3. Add milk, eggs and vanilla extract in a separate bowl and whisk it briefly. Pour half of it into the bowl with the flour and mix until the fluid is incorporated. Then pour the rest into it and mix it again until reaching a smooth textured dough.
  4. Fill the wrappers with the dough and bake them for 10 to 12 minutes.
  5. Let them cool and prepare the topping. Mix egg whites, sugar, water and lime juice in a heat-proof bowl. Heat the mixture over boiling water while constantly stirring. If the mixture reached 140F (60°C) or more and the sugar is completely dissolved. Whisk the egg whites until stiff. It should take about seven minutes.
  6. Fill the frosting into a piping bag with a star-shaped tip and pipe teeny-weeny snow flurry mountains on top of the mini cupcakes. Finally add the light and/or dark blue sprinkles.

Oh, by the way, these cupcakes originally meant to be part of a birthday coffee table (the frozen themed birthday). Therefore I’ve mixed a good deal of colourful sugar sprinkles into the dough.  But you can eat them whenever you want. During these cold and snowy days, or if you stop calling them snow flurries, you can even eat them all year ’round.
