Today, I would like to take you on a trip to Brasil. Only for a few seconds. Close your eyes. Just imagine you are standing in a Brasilian marketplace where local people sell all sorts of local stuff. A small group of street musicians is playing Brasilian music. The marketplace is filled with lots of different but interesting flavours. Someone is mixing cocktails while another one serves a traditional bean stew. But we are only interested in a particular little stall. One that is made for all the sweet treat lovers out there. And what do they sell? It’s a sweet Brasilian speciality called Brigadeiro. And now I have to yank you out of this daydream. Open your eyes and take a look at my raspberry and coconut brigadeiros.

In order to taste this typical Brasilian dessert, you don’t have to fly over to Brasil. Although I wouldn’t say no if someone invites me.  But not today. Today, I want to present this easy-peasy recipe of my take on Brasilian Brigadeiros. You don’t need much. The main ingredients are sweetened condensed milk and butter. The original recipe also calls for cocoa powder and chocolate sprinkles. But you can flavour the condensed milk with anything you like. Hence, I paired it with a few spoons of rasberry jam, white chocolate and coconut flakes.

Just like the chocolates before (roasted almond Chocolates and cocoa truffles), you won’t need special tools for making them. You heat and mix the ingredients in a pan over low heat, let them rest in the fridge, and finally shape it into balls. That’s it! Easy as pie.   1. Bring the jam to a boil. Lower the heat and add butter, condensed milk, chocolate and two to three tablespoons of coconut flakes. Constantly stir it until the dough gets thicker.
  2. Spread the mixture on a greased plate and keep it in the fridge for an hour.
  3. After that you can shape balls out of it. If neccessary grease your hands. This way the dough won't stick to them.
  4. Finally, roll them in the coconut flakes until they are completely (or almost completely) covered.
Recipe Notes

I had to cheat a little bit. My mixture didn't turn out the way I wanted it to be. Instead of a rosy colour it turned almost grey. Believe me, that is anywhere near looking appetizing. So, I added a few drops of pink food colour. I added it before filling it onto the plate.
