This goes out to those of you who love continental breakfast, who enjoy jam, and who turn their yogurt or quark into a piece of art. I’ve got something special for you: red currant and banana jam. This jam is full of surprise. Eating French bread together with this jam, you expect a red fruit…or well…in this case red currant…but you will be hit by a banana flavour.

Everything started with an innocent bowl of red currants. It had been the rest of my Sunday baking binge and I didn’t want to throw it away. So, I’ve searched the World Wide Web. And there was it…the ultimate solution…red currant jam! Unfortunately, those berries are extremely tart (at least in my opinion). Thus, ignoring the sweetness of jam sugar, I’ve added some bananas (because bananas are sweet, aren’t they?). The result is the truly surprising red currant and banana jam.

Superb! It looks so delicious…well, it IS so delicious. It’s a good reason to have breakfast all day long. But recipe before pleasure:

  1. Wash the red currants and remove the trusses.
  2. Peel the bananas, cut them into small pieces and put them together with the currants into a bowl (or directly) into a saucepan
  3. Blend the fruits and strain them through a sieve to remove the pips/pits.
  4. Bring the fruit puree to the boil, add the jam sugar and cook another 4 minutes with constant stirring.
  5. Fill the fruit puree into a preserving jar, close it firmly, and turn the jar upside down for at least 5 minutes.
  6. Now, you have to wait until it is cooled down, and then you can enjoy it.
