Everytime (andI really mean every time) I meet my bestie Jessi, it ends in a proper munching orgy.  Sometimes she has freshly baked cookies ready or pulls out a nice ice cream cake. And sometimes I surprise her with newly created buttercream cakes or Cakepops. But our last girls’ night out was even crazier. While we watched a truly typical movie for women, the table in front of us was covered with lots of different delicacies: bborek with cheese, vegetable sticks with a delicious dip (for the healthy appearances’ sake), crisps, cookies, and these awesome salted caramel brownies with a crunchy crust.

One salted caramel brownie

A mouth-watering composition of a cake consisting of three layers, which couldn’t be more different. First, there is a crispy crust made of crumbled pretzel sticks. Upon it, lies a really moist brownie. And the creamy layer of caramel topped with a dash of coarse sea salt is the culmination of it all.  It’s simply gorgeous.

Instructions
  1. Melt the butter in a pot. Use a food processor or use your hands to crumble the pretzel sticks. Mix them with the molten butter and spread the mixture on a baking tray lined with parchment paper.
  2. To mixthe brownie dough, beat eggs together with sifted powdered sugar, salt and vanilla sugar.
  3. Again, use a pot to melt the butter. Add the chocolate to the molten butter (the smaller the chocolate, the faster it melts). If the chocolate is completely dissolved, you can mix it with the beaten eggs.
  4. Finally add baking powder and the instant chocolate custard and mix it well.Spread the dough on the pretzel stick crust and put it into the preheated oven for about 20 minutes (347F |175°C)
  5. Heat the sugar in another pot or frying pan. When the sugar starts to dissolve you can stir it a bit.
  6. When it is finally fluid, you can add the butter and heavy cream. But now you have to stir it constantly. The caramel is now getting pretty chewey and is hard to stir but it will get fluid again. You can add two or three tablespoons of the condensed milk to refine the mostly bitter taste of the caramel.
  7. Let the cake cool down before coating it with the caramel. Spread it evenly all over the top of the brownie and add a few grains of salt.
