Awesome! Finally the weekend has come! I jump out of my bed, I get dressed up, and dash out the door. Stop! What’s going on here? Instead of getting tickled by nice and warm sun beams, I am welcomed by a freezing shower of rain. That figures. You finally have the time to enjoy the sun and than it’s playing hide and seek. Whatever! Lamenting doesn’t get you anywhere, so you have to get something else that might make you happy.  And maybe this strawberry stracciatella cake is just about the right thing. It’s full of things that stimulate the release of happiness hormones – lots of fresh strawberries and huge chunks of chocolate.

It might look pretty rich but due to its creamy yogurt mixture it’s much lighter than other cakes filled with mascarpone. But it is not only light in taste, it is even easy to prepare, if you use a stor-bought sponge cake. Yes, you’ve heard read it right: I BOUGHT a sponge cake. Naughty me.  But this depressing weather creates a listlessness which isn’t even sparing my hobby. However, if  you have this inexpressibly craving for something sweet, it should be as easy as possible.

  1. Use a cake ring with about 8 inches in perimeter and adjust the size of the sponge cake if neccessary. Put the first part of the sponge cake into the cake ring. (If you want to keep the original size of the sponge cake, keep in mind that you will need more chocolate bars to cover the cake.
  2. Melt half of the chocolate in a pot over boiling water and coat the first sponge cake with it. This will prevent the cake from getting soaked.
  3. Prepare the gelatine sheets as described on the package. Mix curd cheese, sugar and yogurt together and add a few spoons of it to the warm and fluid gelatine. This way you can assimilate the temperature of the gelatine and prevent it from turning into lumps. (hint: If this happens nonetheless, carefully heat it over boiling water)
  4. Whip the cream, dice strawberries and chocolate and carefully fold them and the cream into the yogurt mixture.
  5. Now you can layer the cake. Spread two-fourths of the yogurt mixture on the first sponge cake layer. Add the second sponge cake layer, than add one-fourth of the cream. Add the last sponge cake layer and the rest of the cream
  6. Put the cake into the fridge for about 4 hours or even over night.
  7. If you want to, you can apply the chocolate bars around the cake. With a ribbon you can secure those chocolate bars and make it look even nicer.
