Gingerbread Cake with Orange and Cinnamon Frosting

…Or would you love some sophisticated gingerbread squares?

Oops! The time has come! I am going crazy. Last time, I introduced the autumn season, and now you have to find a Christmassy cake on my blog. Just like those grocery stores which have aisles filled with christmas treats at the beginning of September.  Normally, I smile at this craze and avoid buying christmas stuff until decemeber… or at least until November…No chance! At the end of September I nibbled on my first piece of christmas stollen and ate a handful of spiced biscuits. Though, I avoided the christmas aisles, I found myself in the kitchen baking my own pre-christmassy christmas cakes. Hey presto! There they were. A huge gingerbread cake and smaller gingerbread squares glazed with an orange and cinnamon frosting.

Granny’s plum squares with cinnamon crumbles

…or bye bye summer time! Hi there, autumn!

I don’t want to believe it. The summer is good as gone and autumn is already knocking on our doors. Fully clad in rain, wind and freezing temperatures. That isn’t the perfect way to say hello to us, dear autumn! You’ve got so much more (and even better things) to offer. What about stopping this stormy weather and giving us a basket full of your finest fruits and vegetables? One basket at each front door, please. Then we can bake and cook until our wooden spoon is on fire. Pumpkin soup, plum cake, apple strudel… I could go on for years. So, Are you ready for some autumn baking? Good, I’ve got a super moist treat for you – my granny’s plum squares with cinnamon crumbles.

Raffaello Cake aka. Coconut Truffle Cake

Ping, Ping! It’s Jessi sending me two videos of cakes with astonishing chocolate decoration and asking me which one we should try. But instead of chosing one, I just want to know for which occasion. Who needs a reason to bake cake? It will probably taste as good while sitting alone on the couch. But this cake was for her granny who celebrated her birthday at the beginning of this week (and luckily, I was part of it). So far, so good. Cause her granny is always serving a fresh strawberry cake for this occasion, we definitely knew – We won’t use fruits. Instead, we dug deep into the bag of tricks  calories and managed this Raffaello cake.

Coffee-flavoured Layer Cake

When I am standing in line for my favourite coffee store, I tend to observe other customers. And they couldn’t be more different. There are those who are completely overwhelmed with the extensive range of hot caffeinated beverages and therefore dither. Then there are those who aren’t satisfied with the range of beverages and who have special requests. And there are the repeaters who always order the same type of coffee. That’s possibly me. But that’s not all. I would call myself a wannabe coffee junkie. My coffee has to be sweetened with almost a ton of sugar, and ideally, it should consist of more milk than coffee. Can it still be called a proper coffee? No idea! I just know that the effect of its caffeine isn’t strong enough to make a marathon of learning feasible. Hence I was looking for an alternative and created this coffee-flavoured layer cake.
